Description
Rogan Josh is one of the most populair lamb dishes from Kashmir. Originally the lamb is cooked on the bone until the grease and the meat has separated. This grease is called 'Rogan', and 'Josh' is named after the red colour of the dish.
At AZUL we use this original way of preparing and we serve it with Basmati rice and cucumber/mint raita.
